You could very easily keep with the Normal-type deck,switching back in Blue for Druddigon. However, here are a few other suggestions:

However, these decks will all require spending quite a lot of time or money getting the necessary cards. There are some cheaper alternatives,or you can sub out a similar card from Genetic Apex that you already have.

Most of these decks are going torely on stalling for time and manipulating the board. You will be stalling with Druddigon, swapping out the Active Pokémon if need be with Leaf,using Tauros to clear any ex-Pokémonyour opponent has quickly, and using the other Trainer cards to keep your side of the board in good shape.
While you havemore than enough base power with Pidgeot ex, you have to get them out and have your opponent’s Bench quite full in order to maximize the potential. You will want to be wary of things like Articuno ex for this reason, butyou can use the Pokémon Flute to get more Pokémon on the Benchwhen needed.
You will need Leaf to get Druddigon off the Active Spot.
ThePikachu ex Mythical Island deckis a problem for this deck, as it will hit Pidgeot quite hard. Any Electric-type deck is going to be hard as it will havemaximum damage against you. Fighting-types might also have the same issue because of Tauros and Eevee.
Your other weakness is thatit is going to take time to setup both with getting the evolutions out and getting enough Energy on the card. Right now, there is no way to get more Energy on the card like there is for some of the other big decks.Opponents can also keep their Benches fairly clear, not allowing you to do as much damage. You may want to keep Pidgeot ex back to attempt to tempt your opponent out.
The good news is that this deck can counter some of the big meta decks,but it might be less consistent than some of the others. You will have to do your own experimenting to see if it works well for you, but that is always how it goes inPokémon TCG Pocketwhen you are building a new deck.
